Chewy Choc Peanut Tahini Raw Balls
Raw balls, bliss balls or energy balls, whatever you call them they are delicious and so on trend. These raw balls don't have any added protein in them, they were taken right back to basics using peanuts and tahini for the protein, of course, if you want too add the extra protein that is more than ok! I would recommend either a chocolate, vanilla or plain protein if you are. These are the perfect snack to take to work, on the road or even as a cheeky late night snack (they are so versatile and guilt-free).
Ingredients
550g dry roasted peanuts, 30-40g set aside for coating
1 cup raw cacoa
4 tbsp coconut sugar
2 tbsp rice malt syrup
300g dates, soaked in hot water for about 10 mins
200g tahini
Pinch of salt
Cacao nibs, optional
Desiccated coconut, optional
Method
In a food processor, place peanut that were set aside for coating, blend until they are crushed. Remove and place in a separate bowl.
In the food processor, add in about a third of the peanuts and blitz until they are a almond meal consistency.
Drain the dates and add in to the food processor. Blend until they have broken down but aren't completely blended.
Next, add in the remainder of the ingredients, process these until everything is well combined. Scrape down the sides of the food processor and blend again, make sure there are no chunks of dates in your mix.
Taste the mixture, if you prefer your raw balls super sweet, now is the time that you can add in a little extra rice malt syrup. If they are prefect, then you are ready to shape them, if not just add a little extra sweetener to your taste and blend again.
Grab a 2 tablespoon sized piece of the mixture (or bigger or smaller depending on how big you want the balls to be).
To shape the balls you may have to squeeze out some of the oils from the tahini/peanuts, this is what will make your raw balls chewy and delicious! While rolling the mix into balls this is when you will squeeze the oils/moisture out.
When you have a circle made you can either coat this in crushed peanuts, coconut, cacao nibs or just leave them plain.
Repeat this until all of the mixture is used.
Refrigerate for at least 2 hours (hopefully you can wait that long!)
