sweet potato & fetta roll.

ingredients .


1 cup of spinach 

1 can of chickpea 

1 tbsp of cumin seeds 

2 tbsp olive oil 

1 tbsp paprika 

2 tbsp smoked paprika 

2 tbps cumin 

600g sweet potato 

1/2 red onion

1 tspb balsamic vinegar 

1 tbsp olive oil 

100g fetta of your choice

1 packet of gluten free puff pastry (I use the Simply Wise brand)

3 garlic cloves

Salt 

Sesame seeds to garnish

method.

  1. Blend the cumin seeds, spinach, chickpeas in a food processor until combined. The chickpeas should still have some solidity to them so don’t blend it so much that it looks like hummus, you want it to look like a crumb.

  2. Roast the sweet potato with olive oil and salt

  3. Put onion with balsamic and oil in the oven for 7-10 mins 

  4. Mash through the sweet potato with the chickpea mix 

  5. Add in spices and garlic 

  6. Stir through onion and crumbled fetta gently

  7. Allowing around 1cm of pastry on the side, put a sausage of the mixture along the pastry allowing enough room on the other side to roll the pastry over and overlap with the 1com you left on the other side. Roll the rollover so the overlapping pastry is on the bottom. Brush the rolls with milk and then garnish with sesame seeds
