healthyish gluten free vegan anzac buscuits.
Today is ANZAC Day in Australia and what better way is there to commemorate this day with none other than the iconic ANZAC Biscuit. It's not often you can find an ANZAC biscuit in shops that is gluten free and its something that I haven't had in quite a while, so, what better than to make them and share the recipe with everyone! These ANZAC biscuits don't follow any traditional recipe but they are a bit healthier than your traditional ANZAC biccy.
Healthy(ish) Gluten Free Vegan ANZAC Biscuits

Ingredients
1 cup quinoa flakes
1/2 cup almond meal
3/4 cup shredded coconut
1 cup coconut sugar
1/2 cup dairy free butter
1/2 cup buckwheat flour, sifted
1/2 cup rice flour, sifted
1 tsp vanilla bean paste (or 1 vanilla pod)
1 tsp bi-carb soda
3 tbsp hot water
1/2 tsp baking soda
Method
Preheat oven to 160C.
In a bowl, combine quinoa flakes, coconut, almond meal, flours and baking soda.
In a small saucepan, over a medium heat, place the coconut sugar and dairy free butter for around 3-5 minutes or until everything is melted and combined.
Combine the hot water and bi-carb soda in a cup or small bowl and then add to the butter and coconut sugar, making sure all of the bi-carb mix goes into the butter mixture.
Into the butter mixture, add the vanilla bean paste and stir to combine.
Pour the butter mixture into the dry mixture and stir to combine.
On lined baking trays, place the mixture in tablespoon sized with some room around them for spreading during cooking, approx. 3cm. You can flatten the cookies a little with the back of a regular metal spoon if you would prefer a thinner and bigger, just keep an eye on them while they cook.
Place the tray/s in the oven for 17-20 mins until they are golden brown.
