Breakfast has become such a popular meal in the past few years and they have gone beyond a bowl of cereal and milk or toast and peanut butter. Breakfast has become indulgent. For most people having an indulgent breakfast means high calories and it is something that is had only in moderation. Well that has to change, you can make your cake and eat it too, or in this case your granola. This chocolate granola is the perfect way to start your day, not only does it contain a heap of super foods but it tastes amazing too. If you aren't into chocolatey breakfasts, have no fear, there is a fruity version of this granola, our Pear, Vanilla, Almond and Goji Granola.

Dry Mix Ingredients

½ portion of the dry granola base mix

½ cup dried blueberries (try and get the healthiest possible blueberries with the least sugar used to dry them out)

¾ cup cacao nibs

Wet Mix Ingredients

200g coconut oil

250ml rice malt syrup

2 vanilla beans, scraped

120g coconut sugar

¾ cup raw cacao

1 tsp mesquite powder

Method

  1. In a large bowl (you will need a very large bowl for this or you may choose to use two bowls) mix all of the dry ingredients together. Make sure they are well combined and set aside.

  2. Preheat the oven to 100 C

  3. In a saucepan over a medium heat, add all of the wet ingredients and heat until combined, let the mixture bubble a little. Remove the saucepan from the heat and allow to cool a little.

  4. While this cools a little (you don't want it to cool too much) lay baking paper on a large tray (or two trays) and pour the dry mix onto the tray/trays (you can use two trays if one isn't big enough (if you are using two trays, make sure you split the mix).

  5. You may find it easier to mix through a little of the wet mixture at a time to make sure you don't get clumps of wet mixture and uncoated of your dry granola mix (I know, this would be a catastrophe), if you are using two trays just make sure you split the mixture evenly and not too much is on each tray.

  6. Once the mixture is evenly combined put the trays in the oven for 30-40 mins until you start to smell the granola and it's not sticky.

  7. Take the trays out of the oven and leave to cool for around 5 mins and then start to mix to get the clusters to form.

  8. Leave this to cool fully and then it is ready to be bagged, bottled or stored in an air-tight container of your choice!
