coconutty vegan banana bread

Well we are all in iso at the moment with coronavirus and somehow banana bread has become the go-to iso baking staple (it is delicious so I don’t blame anyone…). Banana bread is one of my favourite things to bake anyway, it is so simple and fills the house with such an incredible smell!.

This banana bread is perfect on it’s own but as a little extra indulgent sweet treat I highly recommend serving this with a dollop of coconut yogurt, my salted caramel sauce, berry compote and a sprinkling of Chocolate Granola.

Ingredients

2 tbps flaxmeal

4 tbsp dairy free milk

1.5 cups plain gluten free flour

1 cup of coconut flakes

3 tsp gluten free baking powder

1/4 tsp bi-carb soda

1/4 cup brown sugar

1/4 cup coconut sugar

3 tbsp maple syrup or honey

1 tbsp apple cider vinegar

2 large ripe bananas, mashed (about 1 cup)

2 vanilla bean pods, seeds removed

1/3 cup olive oil

1/3 cup coconut oil

Method

  1. Preheat the oven to 180C

  2. Combine the flaxmeal and dairy free milk in a cup and set aside. This will get sticky and slimy.

  3. Sift the flour, baking powder and bi-carb soda into a mixing bowl. Add in the sugars, and coconut and stir.

  4. To the flour mixture, add the banana, oils, vanilla beans, maple syrup (or honey), apple cider vinegar and the flaxmeal mixture, stir to combine.

  5. In a 20cm bread tin, pour the mixture in and flatten. Put it in the oven on the middle shelf and bake for 45mins or until the skewer comes out clean.

  6. Cool down for ten mins and serve.
