caramelised banana bread.

I don’t mean to toot my own horn but this has got to be my favourite banana bread I’ve ever made! It is so so simple with just one extra step than normal banana bread (so worth it!).

ingredients.

caramelised bananas.

4 bananas sliced

1.5 tbsp vegan butter

2 tbsp coconut sugar

3/4cup vegan butter

1/2 cup brown sugar

1/2 cup coconut sugar

3.4 cup almond milk

1 tbsp apple cider vinegar

1/2 tsp bi-carb

2 tbsp baking soda

1.5 cups plain gluten free flour

2 tbsp green banana flour

2 tbsp maple syrup

method.

  1. Preheat oven to 180C

  2. Caramelise bananas with the 1.5 tbsp vegan butter and 2 tbsp coconut sugar in a pan. Remove from pan when they are soft and golden brown in colours. Remove from pan and allow to cool. When cool, mash roughly.

  3. Cream the remaining butter and coconut sugar in a bowl until fluffy and combined. Add in brown sugar slowly while mixing.

  4. in a cup, combine the milk and apple cider vinegar and set aside.

  5. To your creamed butter and sugar, add in the milk ad buttermilk mixture, flours, bi-carb, baking powder and mashed bananas and fold together.

  6. In a lined 22cm bread pan, add in your mixture.

  7. Place in the preheated oven for 45 mins or until golden brown and the skewer comes out clean.

  8. Leave to cool and enjoy!
