Guys I found myself in quite a horrendous situation today, it is my day off and I had these big plans of a 50 min walk into the centre of Fremantle to get a gluten-free and vegan jaffle, a soy capp and go sit in the shade at the park and enjoy that slow lifestyle for just a couple of hours. I woke up, put my runners on in pursuit of this dream I had had. I was thirsty and absolutely starving by the time I got to the cafe, I excitedly waited my turn (1.5m apart obviously, thank you pandemic) to order this deliciousness “I’ll have a gluten-free earthlings jaffle please” I said, I was met with the response “I am so sorry, we don’t have any more gluten-free bread”. My heart dropped, I had been looking forward to this all week. I got my coffee and a cake to get me through my walk back, secretly hoping I could find the shop that said there were gluten-free vegan bagels again. Well, we are here now and that was obviously not that case. after recovering on the couch after my 9km round trip with an insufficient amount of food, water, or coffee, ALL I wanted was a tonne of carbs, preferably in bagel form so I made my own. I hope this helps any of you also deprived from cafe food during this quarantine time!
ingredients.
2 bagels
cream cheese (vegan or normal, it is up to you!)
4 falafels
4 tbsp sundried tomatoes
2 tsp capers
Salad bits and pieces: onion, cucumber, peeled in ribbons (see tips below)

method.
Preheat the oven to 180C and place the falafels in the oven to heat up a bit, this only takes 5 or so minutes, they just need to be heated through.
Half your bagels, drizzle with olive oil and place in the oven for 2-3 mins until just crisp. Remove from oven.
Smear the cream cheese onto the bagels (don’t be shy!), both sides!
One one side of the bagel put on half of the sun-dried tomatoes and capers. Break up the falafels and put them on top. On the other side place the cheese (if using), onion slices and then the cucumber.
Put them together and create your bagel! You’re ready to enjoy!
