Gozleme has been for so long something that smells, looks and apparently was a very tasty dish, I just could never ever eat it. It was my mission in life to make a version that I could eat... and so I did. This traditional
This Gozleme might not quite be the traditional version but damn it tastes amazing! The oozy, salty deliciousness of fetta cheese, the steaming hot filling and homemade pastry all make for the perfect recipe.
This pastry recipe is a tweak of my flatbread recipe, which is pure perfection and never fails to amaze me. Gluten-free fresh flatbreads, ahh they are truly amazing and so versatile and not even that hard to make (just a little messy)!
These Gozleme are pretty easy but you might need some patience and definitely do need to get your hands dirty (But that's part of the fun of course!)! They are something that the whole family can get involved in the process, you can prepare this dough in advance and cook with it a little later, just make sure to cover it and place it in the fridge.
You can use a variety of fillings and if you do eat meat then this is a filling you can use. Otherwise get creative! There are so many yummy fillings you can use! The amount of spinach I use may seem excessive but keep in mind that once you cut it and cook it, it does cook down quite a bit. If you are vegan or need the recipe to be dairy free this is definitely possible, choose a coconut yogurt that doesn't have a super-strong taste and then use a dairy free cheese of your choice, if you can get a dairy free feta then that would be perfect, there are so many varieties now in Australia, I personally prefer nut feta, I find they have a more authentic texture.
